On the night, you will step into the creative mind of Republic of Fremantle's Head Chef Rene Mobius with his epic mushroom menu. Savour Lions’ Mane Katsu delicately coated in cashew Vadouvan before experiencing the sublime finale with Chestnut Ganache paired with Geraldton Wax Ice Cream, Macadamia Crumble, and Shitake Dust.
